I am using up a lot of things from the back of my cupboard at the moment, as I am moving to Germany for a while. This soup is one of the tasty outcomes of this process. We were so hungry, and it was so tasty that we forgot to take a picture! I also did not take measurements, so will give approximate quantities. The soup is very colourful and very hearty.
2 courgettes
½ bag cavolo nero
4 fresh tomatoes, insides scooped out
1 small tin of sweetcorn
About half a cup of smoked quinoa
Vegetable stock (enough for soup, so at least 1 l)
Grated ginger
Grated garlic
1 shallot
At least 3 tbsp vinegar (I used apple cider vinegar)
Hot paprika or chilli powder/sauce
Soy sauce, teriyaki sauce if stock is not strong enough
Optional: eggs (poach in soup)
Chop vegetables to desired size. Bring to a boil in vegetable stock. Add smoked quinoa. Add all flavourings to taste. Leave to simmer for at least half an hour. Leave to rest for a bit to enable flavours and textures to develop. The smoked quinoa gives the soup a strong sausage-y taste. It’s very nice with eggs poached in the soup.
