Fish with fried onions


Ok. Ate the fish too quickly for a photo, but here is the pasta!

Ha – back to just above zero budget. Got some fish the other day just before closing time. An entire bag of coley fillets for just £1.20, so that it wouldn’t go to waste. I put them in the freezer and have been eating them, on and off, for the past few weeks – with fried onions and sometimes with baked courgettes, onions and rice. I like putting the fillets in the oven, brushed with a bit of oil and sprinkled with smoked paprika powder. I then bake them until just done and grind a bit of salt on top. Done! You just need to add the fried onions & you have a tasty meal!
I’ve also started eating pasta with fried onions (and sometimes put under the grill with a bit of cheese).
