Mungbean Burgers

Not exactly a pretty picture, but at least there is some kind of record… Anyway, these burgers have a nice, full-bodied taste. I actually wrote the recipe down this time, but gave it away without keeping a copy. But I think I can remember all of it:

1 packet of dried mungbeans, soaked overnight & boiled the next day
1 packet of soy mince
6 medium free range eggs
4 dry bread rolls – soaked in water and squeezed dry
2 large shallots
2 cloves of garlic, grated
sunflower seeds
2 tbsp mustard powder
2 tbsp paprika powder
cayenne pepper
1 tbsp cumin, ground
1 tbsp caraway, ground
1 tbsp coriander
dash of turmeric
some (spelt) flour to improve texture

sunflower oil for frying

Mix above ingredients, working in some extra flour if necessary (e.g. if test burger falls apart in the pan).

Makes about 80 small burgers – easy to carry to parties or occupations…
