Felt like making a beetroot chilli:
1 bag or dried black beans (soaked overnight and cooked for at least 1 hour until I added the other ingredients)
Add 1 big tin of tomato puree to the pot (blend it with the cooking water from the beans), then proceed to add:
2 bunches of beetroot (washed, peeled and chopped into small pieces)
3 onions or large shallots
4 cloves of garlic
1 packet of soy mince
Spices, ground: cinnamon, coriander, star anise, cumin, paprika, cayenne pepper.
Served it with coarse dill and carrot bulgur & celeriac salad – tasty!!
… and great colour, too!
