Another nice & simple dish a friend cooked for me recently goes as follows:

Boil potatoes in their skins for mashing

In the meantime, wash fresh spinach, leave to dry.

Fry some chopped onions and garlic. Add fresh spinach, add lots of grated nutmeg, salt and pepper. After the spinach has ‘shrunk’, beat an egg or two, add a little salt and stir it into the spinach, turning everything frequently so that the spinach becomes coated with egg evenly.

Drain potato water, mash potatoes in their skins, add lots of nutmeg. Add salt and pepper, and either cream, or milk and butter. Beat everything into a creamy mash!

Serve eggy-spinach with mash!
