Am still on a quest for the perfect aubergine fritters. This was the latest attempt. They look a bit wrong, but are actually very tasty! I sliced the aubergine, and battered them in beaten egg and a mixture of flour, salt, ground paprika, cumin, coriander, nutmeg, pepper and cajun spice mix. Left them in a bit long & had them in the wrong kind of pan on the wrong kind of heat I think.
The dip was improvised from ketchup mixed with the leftover juice from baked figs and plums which I had for breakfast that day… Highly recommended!
