Chestnut mushrooms were on special offer, so I got to make this tasty stir fry quite a lot…
Soak pudding rice with water for 30 mins. drain water, put in a pan with water just covering it and some salt. Boil for about 10mins until dry. Leave to rest.
Fry in a very hot pan:
sliced chestnut mushrooms
chopped spring onions
Put rice on a plate. Put stirfry on the same plate & put a few dashes of soy sauce over it. Done!
