Feta Cheese Omelette

One of my quick lunches – I usually have it with tomato-garlic salad (tomatoes, crushed garlic, oil, salt, pepper). It’s very easy:

Mix 2 eggs with salt, pepper, some grated cheese (anything from cheddar to parmesan) and some nutmeg, if you have/like it. Whisk and pour into heated (not too hot!) & oiled frying pan. Crumble some feta cheese on top of the egg while the surface is still liquid. Leave to set for a bit, then flip it over to cook the other side through. The other side usually gets a bit messy, so I flip it over again and fold it before serving. Feel free to add some herbs to it!
