Thai Green Curry (economy version)

This is an abomination of an authentic recipe that my cousin once taught me. He would probably faint if he read this…


1 cup of rice per person

½ tin of coconut milk per person (don’t buy at supermarket, but at a local Indian or Caribbean store – it’s cheaper there and you might get some recipe ideas thrown at you)

Tofu, Quorn or chicken or whatever you’ve found that will do100 g spinach (I even used beans when I was desperate)

green curry paste (or any other thai curry paste that is lurking in the back of your fridge)

salted soya beans or salt


Boil rice. Fry tofu. Make sauce from coconut milk, curry paste and salted soya beans/salt. Heat, but don’t boil. Put tofu and spinach into sauce. Heat again till spinach is tender. Done 😀
