Lentil Moussaka

1 onion

2 cloves of garlic

Oil for frying

1 can of tomatoes

1 tbsp. tomato puree

2 cups of water and, if possible, another cup of tomato juice or something tomato…

100 g lentils

pepper, salt, Italian herbs, cinnamon

Add anything else you would like in there, e.g. pasta, aubergine, celery

 

1 small pot natural yoghurt

Fry onions in pot with garlic (also add your vegetables, if using). Add chopped tomatoes, tomato puree, lentils, water, and spices. Boil for approx. 1 hour. Fill oven-proof dish with tomato-lentil mixture. Cover everything with a thick layer of yoghurt and finally with a layer of grated cheese. Leave in oven (mid heat) until the cheese crust gets brown and crispy.
