Leek Slices/Leek Bread

Leek bread is a recipe I appropriated from my mum. It makes a very tasty lunch or even dinner and requires little work or ingredients. Per person use

2 toasted slices of rye bread, sunflower seed bread or other nice, slightly firm bread

1 small leek

1 egg

1 onion

Crushed garlic

Cheese

Nutmeg, Pepper, Salt

Optional: bacon, parsley, chives, chopped nuts 

Chop leeks and onions and quickly fry them with a bit of oil, garlic, salt, pepper and nutmeg. In a bowl, beat egg with cheese. Add fried leeks and onions to egg-cheese mixture. Stir and spread over the toasted bread. Bake for about 15 mins at medium heat until firm and slightly browned.
