How to make limpy root vegetables firm again

I used to get some badly battered vegetables from the market or the reduced to clear pile. If they still had a bit of root left, I just put them in water for about an hour and they would be so crisp that I could eat them raw again. As far as I know, that’s a popular trick of vegetable sellers anyway…
