Fig parfait


I owe this recipe to my cousin’s cousin at a 70th birthday party (thanks again!). It’s dead easy, cheap to make when figs are in season and the markets sell ripe figs off for £1, it tastes great and sounds terribly classy! The downside: you can only make them when figs are cheap and in season, so check out you local outdoor market!

You need:


1 pot Whipping cream

Some ripe figs (I get mine from my local market, 6 for £1 when they are in season)


If desired: some suitable alcohol.


Whip cream. Scoop out figs and add the soft flesh and the sugar to the cream (and alcohol, if using). Pour into freezer proof mould and seal. Put into freezer and stir occasionally. Serve either frozen or half-frozen. Can be served with sweet sauces of some kind.
